Chicken Soup, before the matzo balls or noodles

Recipe Ingredients for Chicken Soup

4 lb. chicken, whole
3 quarts water
3 carrots, peeled, sliced
3 stalks celery, sliced
1/2 onion, chopped
1 tbsp. dried parsley
2 tsp. salt

Recipe Directions for Chicken Soup

  1. Bring chicken, vegies and water to a boil and simmer for 1 1/2 hours. Remove chicken to a platter and let cook. Remove skum and oil from top of broth . Use a sieve to remove all the vegetables. Discard vegies. Return broth to pot.

  2. Strip the meat of the chicken off the bones and cut into chunks. (Many chicken soup recipes call for cooking the chicken much longer, but it becomes stringy if you do.) Add chicken chunks to the broth in the pot.

  3. Add fresh vegies (same amounts, same kind) into the broth.

  4. Add salt and finely ground pepper to your taste.

  5. Simmer an additional 20 minutes or until vegies are cooked but not mushy.
