Irish based, chicken, potato and bacon soup. Ideal main meal.

Recipe Ingredients for Chicken Soup

3 smoked streaky bacon
500 g boneless chicken
25 g butter
3 medium potatoes
3 medium onions
600 ml chicken stock
600 ml milk
150 ml double cream
1 salt
1 pepper

Recipe Directions for Chicken Soup

  1. Gently fry the bacon and chicken in a large saucepan for 10 minutes.

  2. Add the butter, potatoes and onions and cook for 15 minutes, stirring all the time.

  3. Add the stock and milk, then bring the soup to the boil and simmer for 45 minutes. Season with salt and pepper to taste.

  4. Blend in the cream and simmer for 5 minutes. Then, transfer the soup to a warm tureen or individual bowls and serve with bread of your choice.
