Recipe Ingredients for chicken soup

3 pounds skinless chicken thighs
2 cups carrots
2 cups diced celery
1/4 cup diced shallot
2 quart chicken broth

Recipe Directions for chicken soup

  1. brown chicken thighs gently. Add remaining ingredients, cover, simmer for 30 minutes.

  2. You can remove the chicken, strain the broth, put the chicken back with fresh vegetables if you want a clear soup.
