Homemade chicken soup. Makes about 16, 12 oz. servings

Recipe Ingredients for Chicken Soup

4 quarts water
6 oz. chicken legs
6 oz. chicken thighs
2 onions, chopped
4 celery stalks, chopped
2 medium carrots, chopped
2 cups tomatoes, seeded and chopped
1 tbsp. sea salt
1 tsp. fresh ground pepper

Recipe Directions for Chicken Soup

  1. Place chicken in pot.

  2. Add water and salt.

  3. Once water comes to a boil, skim top and remove scum.

  4. Add onions, carrots, celery and tomatoes. Allow to simmer for about 3 hours.

  5. Remove chicken.

  6. Allow broth to chill. Remove all congealed fat.

  7. Shred chicken and return to soup.
