I used a leftover carcass & drippings from a roasted chicken. Boil to make broth, add some veggies & rice, there ya go! A good & easy soup.

Recipe Ingredients for Chicken Soup

1 lb chicken
3 large carrots, sliced
3 stalks celery, sliced
4 potatoes, quartered
1 1/2 cups rice

Recipe Directions for Chicken Soup

  1. You can make your own chicken broth by boiling the leftover bones & meat from yesterdays dinner.

  2. Cover with water & let them boil for about 15 minutes then add the vegetables & let simmer for about 1 hour. Add rice during last 20 minutes.

  3. Season with salt & pepper if you like. Personnally I like fresh lemon juice & cilantro.
