Chicken Soup Makes six 2 1/2 cup servings, 289 per serving. Made in 4qt pot.

Recipe Ingredients for Chicken Soup

10 oz cooked chicken thighs
6 stalks celery
1 onion
1 cup carrots
6 cups chicken stock
1 1/2 cups brown rice

Recipe Directions for Chicken Soup

  1. Simmer chicken thights and one piece each of celery, carrots and onion.

  2. Simmer 1 hour.

  3. Remove chicken and vegetables and dispose of vegs.

  4. Cut up chicken and return to pot with chopped onion, carrots and celery.

  5. Add seasonings - margoram, tyme, parsley, etc.

  6. Simmer 1 hour.

  7. Add cooked rice. Heat through.
