Recipe Ingredients for Chicken Soup with Parsley Dumblings

6 servings Earth Balance (Tbls)
1/2 medium onion, chopped
6 tbl flour
9 cups Chicken stock, home-prepared
2 stalks celery, sliced
6 medium carrots, sliced
1 tsp bay leaf (whole)
1 chicken breast, chopped
1 cup parsley, chopped
1 1/2 cup soymilk
2 tsp salt (or less if using canned broth)
1/2 tsp fresh ground pepper
1 2/3 cups unbleached flour
2 tsp baking powder
1 tsp salt
4 1/2 servings Earth Balance (Tbls)
8 tbl parsley, chopped
8 tsp soy milk

Recipe Directions for Chicken Soup with Parsley Dumblings

  1. Ideally stock should be home made, but canned can be used. If canned is used, do not add salt.

  2. In a large wide pot, saute onions in Earth Balance, then add flour and stir for 4-5 minutes. Add stock, bring to a boil. Add celery, carrots, and bay leaf. Cook until carrots are tender. Add soymilk, parsley, salt, pepper, and chicken breast. Keep warm.

  3. MAKE DUMPLINGS

  4. Sift flour, baking powder and 1 tsp salt into a bowl. Using a pastry cutter or two knives to cut in Earth Balance until mixture resembles coarse meal. Stir in 8 Tbls chopped parsley. Make a well in the center, add soy milk. Mix. Dump mixture onto a floured surface and lightly knead.

  5. Divide into 3 portions. Roll into logs. Cut each log into 6 portions for a total of 18 pieces. Roll each piece of dough into a ball and set aside.

  6. PUTTING IT ALL TOGETHER

  7. Bring soup back to a boil. Drop all the dumplings into the soup. Cover and simmer to 10 minutes. Turn dumplings and simmer for 10 minutes more.

  8. Serve each person 3 dumplings and some soup. Extra portions refrigerate well for 3-4 days.`
