Recipe Ingredients for Chicken Soup with Kale

1 lb potato, peeled thinly sliced
6 cups low sodium chicken stock
4 oz chorizo sausages, thinly sliced
1 clove garlic, finely chopped
12 oz kale leaves, shredded
1/4 cup water
1/8 tsp pepper

Recipe Directions for Chicken Soup with Kale

  1. Combine potatoes and stock in a saucepan. Simmer 10 to 15 minutes or until the potatoes are very soft. With a fork, mash about half of the potatoesagainst the side of pan. Remove from heat.

  2. Add chorizo to a nonstick skillet and cook over moderate heat, stirring, about 5 minutes or until crisp and fat is rendered. Spoon off almost all fat.

  3. Add garlic to skillet and cook, stirring, about 3 minutes, until softened; then add measured water, cover skillet, and cook 5 minutes or until kale is wilted.

  4. Stir kale and chorizo into potatoes. Simmer the soup about 5 minutes. Season with pepper.
