Recipe Ingredients for Chicken Sotanghon Soup with Shitake Mushrooms

1.5 cup, chopped or diced Chicken, Roasting, Meat Only
1.5 medium (2-1/2" dia) Onions
1.5 cup, chopped Cabbage
1 tbsp Vegetable Oil, Canola
3 clove Garlic
0.25 oz Shitake Dried Mushrooms
1 carrot (7-1/2") Carrots
125 grams Noodles, Chinese, Cellophane Or Long Rice (Mung Beans), Dehydrated
1 tablespoon Fish Sauce
6 cup No Salt Added Chicken Broth

Recipe Directions for Chicken Sotanghon Soup with Shitake Mushrooms

  1. Start by cooking the onions in a nice big pot with a couple tablespoons of oil on medium heat. Sweat out the onions till they are translucent, then add the garlic and cook for about a minute more until fragrant. Add the cabbage and carrot and cook until the cabbage is slightly softened. While that?s going on, get your shiitake and slice thinly, discarding the tough stem. If you?re using fresh shiitake, keep the stem. Toss them into the pot. Next, add the chicken stock and bring to a boil. When it starts to boil, turn down to medium and simmer to develop the flavors.

  2. *why not add the chicken now? You should have some nice chicken flavor from when you made the stock. Typically, when you make stock, you are drawing all the flavor out of the meat, so what you end up with is a chicken broth and a tasteless carcass and veggie that you just toss. The leftover rotisserie chicken meat is rich in flavor, so add it last so you can preserve it.

  3. As the broth is simmering, get yourself a small strainer or tea infuser and put in the atsuete. Put into the broth and let it steep until you get the desired color you want. If you don?t have the atsuete, don?t sweat it. Continue on?

  4. Finally, add the chicken and sotanghon and cook until the noodles are tender and the chicken is warmed through. Season with patis and freshly ground black pepper. Give a final taste and fine tune with salt or patis if you desire. Serve in a nice big bowl and garnish with green onion. Enjoy
