This tastes so great my family has no idea that it's also healthy. I typically service this over a bed of high fiber/protein pasta.

Recipe Ingredients for Chicken in a skillet-Italian style

3/4 cup fat free chicken broth
3 tablespoons tomato paste
1/4 teaspoon ground black pepper
1/2 teaspoon dried italian seasoning
1/8 teaspoon salt
2 cloves minced garlic
16 ounces chicken breast
3 tablespoons seasoned bread crumbs
2 teaspoons olive oil
2 cups fresh sliced mushrooms

Recipe Directions for Chicken in a skillet-Italian style

  1. Combine the chicken broth, tomato paste, black pepper, italian seasoning, salt, and garlic. Mix well and set aside.

  2. Dredge the chicken in the bread crumbs. Heat oil in a large skillet over medium high heat. Saute the chicken until lightly browned.

  3. Add the reserved broth mixture and the mushrooms to the skillet and bring to a boil. Cover and reduce heat to low. Simmer for 30 minutes. Remove chicken and mushrooms and set aside. Cover to keep warm.

  4. Bring broth mixture to a boil and cook for 4-5 minutes or until reduced to desired consistency. Spoon sauce over chicken and serve.
