Chicken, peppers and onions coated with mayo, lemon juice and herbs

Recipe Ingredients for Chicken Skewers

3 cups of chopped boneless skinless chicken breasts
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1 large red onion
1 tablespoon of lemon juice
1 tablespoon of mayonnaise
6 saltine crackers
2 tablespoons of Parmesan cheese

Recipe Directions for Chicken Skewers

  1. Chop all vegetables into 1x1 inch squares. Place on skewers mixing with chicken. Combine lemon juice, mayonnaise and preferred herbs in a bowl. Coat the chicken with these herbs.

  2. Combine crushed crackers and Parmesan cheese. Coat chicken w/ mayo/juice mixture
