Recipe Ingredients for Chicken in Sichuan Peanut Sauce

1/3 cup peanut butter
1/3 cup water
2 tablespoons soy sauce
2 tablespoons vinegar
1 teaspoon fresh ginger root, grated
1 clove garlic
1/2 teaspoon red pepper, crushed
1 1/2 teaspoons sesame seed oil
1 pound chicken, boneless skinless
1 cup carrot, shredded
1/4 cup scallions, sliced

Recipe Directions for Chicken in Sichuan Peanut Sauce

  1. In food processor or blender, mix peanut butter, water, soy sauce, vinegar, ginger root, garlic, pepper, sesame oil until smooth.

  2. Cut chicken into bit size pieces. In non-stick skillet, brown chicken pieces. Add shredded carrots and scallions, saute until vegetables are warm.

  3. Lower heat and add peanut butter sauce, stirring occasionally until heated through.

  4. Serve over pasta or salad greens.
