Spicy African stew with chicken and shrimp.

Recipe Ingredients for Chicken & Shrimp Palava

12 oz boneless chicken, dark meat
1 clove garlic
1/2 tsp thyme
1/8 tsp curry powder
1/8 tsp cayenne
1 tsp oil
1 cup onion
1/2 tsp salt
1/2 cup chicken stock
4 oz potato
4 oz kale
1/2 oz pumpkin seeds
2 1/2 oz shrimp

Recipe Directions for Chicken & Shrimp Palava

  1. Cut boneless, skinless chicken thighs in 2 or 3 peces. Marinate chicken pieces 8-24 hours in the refrigerator with chopped garlic, thyme, curry powder, and cayenne.

  2. Saute the onion in oil until soft. Add the salt, chicken stock, sweet potato (peeled and diced), kale (stemmed and chopped), and marinated chicken. Bring to a simmer, cover, reduce heat and simmer 20-25 minutes, or until chicken is thoroughly cooked.

  3. Stir in pumpkin seeds and shrimp (peeled and cooked). Heat through. Serve over rice or polenta.
