Delicious vaguely thai coconut milk soup with chicken and veggies.

Recipe Ingredients for Chicken and Shrimp coconut milk soup with veggies

1/3 cup black beans
1/3 cup beans
4 legs chicken
1 can chicken broth
14 ounces coconut milk
17 ounces butternut squash
152 gram limes, juiced
10 cloves garlic
2 pounds sweet potato
1 zucchini
2 1/5 ounces spinach
1 pound shrimp

Recipe Directions for Chicken and Shrimp coconut milk soup with veggies

  1. Boil the chicken and remove the meat from the bone.

  2. Chop up the veggies and peel/devain the shrimp

  3. Add the veggies, broth, coconut milk, and lime juice to the pot containing the water the chicken was boiled in.

  4. Boil for about 15-20 minutes untilt he potatoes and squash are tender

  5. Add the shrimp and boil shortly, just enough to cook the shrimp.

  6. Serve into bowls (1.5 cup servings) and add a bit of freshly cut cilantro as garnish if desired.
