Recipe Ingredients for Chicken in sherry sauce

2 pounds chicken breasts, skinless, boneless
1 tablespoon olive oil
1/2 cup sherry
2 tablespoons cornstarch
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/4 teaspoon pepper, ground
1 cup chicken broth
1/2 cup onion, chopped
4 oz can mushrooms, with liquid
1 tomato, chopped

Recipe Directions for Chicken in sherry sauce

Brown the chicken (and onions) in the olive oil on both sides. Add sherry, cover, and cook for 10 minutes. Mix cornstarch, spices, broth, and liquid from the mushrooms; add to pan, stir, recover and cook 10 minutes more. Gently stir in mushrooms and tomatoes, cover, and cook 5 minutes longer. Serve over rice or mashed potatoes.
