Gumbo made with chicken, shrimp, scallops, fish and okra.

Recipe Ingredients for Chicken and Seafood Gumbo

1/4 cup coconut oil
6 tbsp Brown Rice flour
4 cups yellow onion
3/4 tsp salt
4 cups celery
3 cloves garlic
4 cups chicken broth
3 cups water
1 tsp lemon
1/2 tsp fresh thyme
1 tsp fresh basil
1 tbsp fresh parsley
1 oz. can tomatoes
4 cups frozen okra
1 lb. scallops
1 lb. frozen shrimp
1 lb. chicken breast
8 oz cod

Recipe Directions for Chicken and Seafood Gumbo

  1. Make roux with oil and flour.

  2. Add vegetables and cook until soft.

  3. Add broth and next 8 ingredients.

  4. Cover and simmer for 1 hour.

  5. Add chicken and cook for 15 minutes

  6. Add seafood and cook an additional 15 minutes.
