Recipe Ingredients for Chicken Scaloppine with Mushrooms and Tarragon

12 oz chicken, 2 breasts, skinless, boneless
2 tbsp shallots, diced
2 cups mushrooms, mixed (cremini, portobello, oyster)
4 tbsp marsala wine
1/2 cup tomato, diced
1 tbsp tarragon, fresh, chopped
2 cups chicken stock
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for Chicken Scaloppine with Mushrooms and Tarragon

  1. pound the chicken breasts between sheets of waxed paper with a meat mallot until 1/2 inch thick - cut each breast in half

  2. spray skillet with cooking spray, and cook chicken breasts over medium heat until slightly brown on each side, and cooked fully through - remove from pan

  3. add shallots, mushrooms, and marsala wine to skillet - cook until almost evaporated 1-2 minutes (slightly higher heat)

  4. add tomatoes, tarragon, chicken stock, salt, and pepper - bring to simmer and cook until sauce is reduced by half

  5. put chicken on plate and cover with sauce
