Chicken Scallopini - Easy Serving in ounces 7.24 ounces

Recipe Ingredients for Chicken Scallopini

1 1/5 pounds boneless, skinless chicken breast
1 teaspoon lemon juice
1/4 teaspoon salt
1 ground pepper
1/4 cup white bread crumbs
1 cooking spray
1/2 cup chicken broth
3/4 ounce dry white wine
1/2 teaspoon butter
117 grams portabella mushroom

Recipe Directions for Chicken Scallopini

  1. Flatten chicken breast to a 1/4 inch thick

  2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken once skillet is hot, cook 3 minutes on each side or until chicken is done. remove from pan; keep warm.

  3. Add broth, wine, mushroom, and butter, cook for 30 - 45 seconds, stirring constantly.

  4. Remove from heat.

  5. Pour over chicken and serve.
