Recipe Ingredients for Chicken with Savory Sauce

1 tbsp Olive Oil
6 piece Boneless, skinless chicken thighs
1/4 cup, chopped Onions
2 tbsp Rosemary, Fresh
2 tbsp Parsley. Fresh
2 tsp Thyme, Fresh
2 cloves, raw Garlic, finely chopped
1 pepper Peppers, Jalapeno, seeded, finely chopped
1 cup chopped sliced raw Shiitake Mushrooms Packaged
1 cup Soup, chicken broth, canned, less/reduced sodium
1 tbsp Vinegar balsamic
2 tsp Currants, Zante, Dried
1/2 tsp Sea Salt
1 1/2 cup, chopped Broccoli

Recipe Directions for Chicken with Savory Sauce

  1. In 12-inch skillet, heat oil over medium heat until hot. Cook chicken, green onions, rosemary, parsley, thyme, garlic and jalapeno in oil 12 to 15 minutes, turning chicken occasionally, until chicken is brown.

  2. Add mushrooms, 1/2 of the broth and the vinegar. Heat to boiling; reduce to simmer. Simmer uncovered about 5 minutes or until about half of the liquid has evaporated.

  3. Pour remaining 1/2 of broth over chicken; sprinkle with currants and salt. Cover and simmer about 10 minutes or until the center of the chicken at the thickest part reads 180 F on your meat thermometer. Uncover and cook 5 minutes longer.

  4. Divide chicken and sauce among 3 dinner plates and add broccoli.
