Chicken Saute with Zuchini and Peppers

Recipe Ingredients for Chicken Saute with Zuchini and Peppers

1 box (16 oz.) BARILLA Rigatoni, uncooked
1 tbsp. extra virgin olive oil
1 1/2 pounds small boneless skinless chicken breast halves
2 cloves garlic, minced
1/4 tsp. black pepper
1 lb. zuchini, sliced
2 medium green peppers, cut into thin strips
26 oz. Marinara Sauce

Recipe Directions for Chicken Saute with Zuchini and Peppers

  1. COOK pasta as directed on package.

  2. MEANWHILE, heat oil in Dutch oven or large deep skillet on medium heat. Add chicken, garlic and black pepper; mix well. Cook 5 min., stirring occasionally. Add mushrooms and green peppers; stir. Cook 5 min. or until chicken is cooked through and green peppers are crisp-tender. Stir in the marinara sauce; simmer 5 min., stirring occasionally.

  3. DRAIN pasta; place in large serving bowl. Add half of the chicken mixture; toss lightly. Top with the remaining chicken mixture; sprinkle with cheese.
