Recipe Ingredients for Chicken Saute with Dried Fruit and Walnut Sauce

1 tablespoon olive oil
4 chicken breast ,boned and skinned, 4 oz. each
2 cloves garlic,large, minced
1/2 cup chicken broth, low sodium
1/2 cup dried cranberries
1/2 cup toasted Walnuts, coarsely chopped
1 tablespoon balsamic vinegar
1 tablespoon honey
1 teaspoon cornstarch, mixed with 1 teaspoon water
2 tablespoons chopped fresh parsley

Recipe Directions for Chicken Saute with Dried Fruit and Walnut Sauce

  1. In a large non-stick skillet over medium heat saute chicken in olive oil for 8 minutes, turning once.

  2. Remove chicken from skillet; set aside.

  3. Add garlic to skillet; cook, stirring, 2 minutes.

  4. Raise heat; add broth and cook, scraping to release cooked to bits on bottom of skillet.

  5. Reduce heat to medium; stir in dried fruits, walnuts, honey, vinegar and thyme.

  6. Cover and simmer 3 minutes. Return chicken to skillet; cover and simmer 5 minutes or until chicken juices run clear.

  7. Stir in cornstarch mixture; cook until slightly thickened. Stir in parsely and season with pepper.

  8. Serve chicken topped with sauce.
