Homemade chicken sausage with lots of veggies and pasta.

Recipe Ingredients for Chicken sausage, veggie and pasta soup

1 lb ground chicken
1 tbs extra virgin olive oil
1 tbs fennel seed
1/2 tbs ground sage
1/2 tsp oregano
1/2 tsp black pepper
1/4 tsp crushed red pepper
1 large onion, diced
3 cloves garlic, minced
1 lb asparagus, trimmed and cut into 1" pcs
1 medium green pepper, diced
3 stalks celery, diced
2 large carrots, diced
1 fruit+2-1/8"+dia lemon
1 1/2 cup mushrooms, sliced
6 cups No Salt Added Chicken Broth
14 oz petite diced tomato, no salt added
1 tbs salt
1 lb pasta, penne rigate

Recipe Directions for Chicken sausage, veggie and pasta soup

  1. cook pasta per direction, drain and reserve

  2. Heat oil in large soup pot over med high heat

  3. add chicken, sage, fennel seed, oregano, crushed pepper and black pepper, brown until chicken done

  4. add veggies, cook until onions getting soft and mushrooms are shrinking

  5. add broth, tomatoes, zest and juice of lemon and salt

  6. bring up to simmer, let cook about 30 minutes

  7. add pasta, bring back to simmer-serve
