Chicken and Sausage Soup Recipe

Great for a cold night, also good served over noodles.

Recipe Ingredients for Chicken and sausage soup

16 oz boneless skinless chicken breast
5 links hot turkey sausage
9 cups chicken broth
3 medium carrots
2 stalks celery
1 medium onion
3 cups fresh baby spinach
1 clove garlic
1/4 tsp thyme
1/4 tsp oregano
1 pinch white pepper
1 pinch salt

Recipe Directions for Chicken and sausage soup

  1. Cut the chicken into pieces and saute over medium heat until cooked through. Remove from heat and set aside. When it's cooled a bit, shred it with your fingers.

  2. Chop onion, carrots, and celery.

  3. Cut the sausage into bite-sized pieces and cook in the bottom of a large, heavy-bottomed pot. When cooked, set aside in another bowl.

  4. Begin to heat up the broth in a separate pot, so that it's not cold when added to the hot ingredients.

  5. Use the grease from the sausage to saute the onion, carrots, and celery until a bit softened. Add the garlic, spinach, and spices. Cook until the spinach is wilted.

  6. Add the meats and broth, stir and reduce the heat to medium low. Continue cooking until carrots are softened to the desired texture. Adjust seasonings as desired.
