Recipe Ingredients for Chicken, Sausage and Seafood Paella

5 ounces dry yellow rice
8 ounces mushroom
10 ounces fat free chicken broth
1/2 pound prawns
1/2 pound scallops
1 cup green pepper
1 onion
1/2 pound chicken
2 cloves garlic
1 cup red pepper
1 cup cooking wine
3 links turkey sausage

Recipe Directions for Chicken, Sausage and Seafood Paella

  1. Prepare saffron or yellow rice as package directs.

  2. Cooked chicken and cut into bite size pieces. Some sort of southwest seasoning kicks it up a notch.

  3. In a saute (or preferably a paella pan, 15 ") cook up the sausage slices.

  4. Add garlic and mushrooms, I prefer the chopped onions and green/red peppers in more towards the end for a crisper bite.

  5. Mix broth and wine in together with the rice and chicken/sausage mix already in the pan. I usually bring it all to a simmer and go for about 20 minutes.

  6. Then add the scallops and shrimp. Stir in onion and peppers if not done already. Continue simmering until for at least 10 more minutes to cook the seafood. Using precooked shrimp cuts down on time, scallops cook pretty fast.

  7. Plate and serve.
