Recipe Ingredients for Chicken sausage

1 1/2 lbs. boneless skinless chicken breast
1 lb. boneless skinless chicken thighs
2 tablespoon fresh thyme
1 tablespoon fresh rosemary
1 teaspoon salt
1 tablespoon brown sugar
1 teaspoon black pepper
1 tablespoon dried sage
1 teaspoon fennel seed

Recipe Directions for Chicken sausage

You will need a meat grinder to accomplish this recipe as written. If you have no meat grinder, substitute the meats with ground chicken. Your nutrition label will change, so if you substitute, you must re-enter the recipe for the proper values. Having said that.... here is the remaining recipe. Blend all, portion in to 12 patties. Freeze what you will not use in 48 hours while in the patty shape for easy preparation for your next serving.Cook on medium heat as the fat content is low and it will burn if not cooked slowly.
