Made with dark meat. Can reduce calories and fat by using chicken breast only.

Recipe Ingredients for Chicken & Sausage Jambalaya

16 ounces dark chicken meat (approximately 3 large leg quarters)
6 cups water
4 cups fat free chicken broth (2 cans)
2 cups diced canned tomatoes (1 can)
1 large onion, diced
3 stalks celery, diced
1 bell pepper, sweet orange or yellow or red, diced
1/2 teaspoon garlic salt, to taste
1 teaspoon cumin
1 teaspoon Cajun seasoning, preferably Chacere's, to taste
1 dash salt, to taste
1 dash black pepper, to taste
2 dashes Tabasco, to taste
3 cups rice

Recipe Directions for Chicken & Sausage Jambalaya

Cook leg quarters in boiling water. When meat is falling off the bones, remove from water. Cool, then debone and dice chicken. Add diced chicken, and remaining ingredients to water, and cook until rice is soft and fluffy, approximately 1/2 hour. Best when cooked 1 day in advance. Makes 12 small servings, or 10 dinner servings.
