Recipe Ingredients for Chicken and Sausage Gumbo

8 ounces chicken breast
1/8 teaspoon salt
1/8 teaspoon black pepper
12 ounces Chicken Sausages
14 1/2 ounces diced tomatoes with green chilies (not drained)
3 cups frozen cut okra
1 green bell pepper, seeded and chopped
1 large onion, chopped
1 1/2 teaspoons Cajun seasoning
1 teaspoon garlic, chopped
1 teaspoon Worcestershire sauce
1 teaspoon ground thyme

Recipe Directions for Chicken and Sausage Gumbo

  1. Season chicken with salt and pepper, and place it in the crock pot. Add all remaining ingredients and lightly stir.

  2. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours, until chicken is fully cooked.

  3. Remove chicken and place in a large bowl. Shred each piece using two forks - one to hold the chicken in place and the other to scrape across the meat and shred it.

  4. Return shredded chicken to the crock pot, and give your gumbo a stir. If you like, season to taste with additional salt and pepper. Serve it up!
