Homemade recipe! I just made it and it smells delicious! Next time I am using homemade mexican seasoning, the nutrition grade on this one stinks....

Recipe Ingredients for Chicken & Sauce for Chicken Enchiladas

1/2 medium onion, diced finely
1 clove of garlic
1 serrano pepper
1 tbs extra virgin olive oil
1 chicken breast
1 1/2 cup water
1 small tomato
3 tbs cilantro, chopped
1 tbs mexican seasoning
1 tsp freshly ground black pepper
1 tsp cumin seeds
2 tsp corn starch (optional)

Recipe Directions for Chicken & Sauce for Chicken Enchiladas

  1. heat 1tbl olive oil in pot

  2. dice onions and add to pan once oil is heated

  3. let onions cook and brown

  4. add garlic and serrano pepper, diced

  5. spoon mixture into a bowl

  6. place chicken breast in same pot

  7. add 1.5 cups water

  8. bring water and chicken to boil

  9. reduce heat to med-low for 10-12min, turning chicken a few times

  10. once chicken can be forked through easily, transfer to a cutting board

  11. reserve chicken broth in a separate container

  12. discard any gristles on chicken

  13. using utensils of your choice (i used a fork and knife) shred chicken breast

  14. put shredded chicken into a storage container and add broth until chicken is just covered, let sit uncovered to cool

  15. in a blender, blend tomato, cilantro, seasoning, spices, and onion until all items are in a thick chunky liquid

  16. transfer sauce to the pot and bring to a boil with remaining broth

  17. once sauce is boiling remove from heat and add 3 spoons of this sauce onto the chicken and broth

  18. if the remaning sauce is too runny add corn starch by first adding cornstarch to 2tbs cold water to dissolve

  19. then pour cornstarch mixture into sauce

  20. transfer sauce into a container, let sit uncovered to cool.

  21. enchiladas can be prepared immediately or later for dinner by assembling chicken in warm corn tortillas, wrapping tortillas shut, adding sauce over enchilada, and microwaving or baking. you can add grated cheese, queso fresco, etc. if you like.
