Recipe Ingredients for Chicken in Satay Peanut Sauce

10 ounces boneless chicken breast (2 fillets)
4 tablespoons Peanut Satay Sauce (A Taste of Thai brand)
1 medium onion (chopped)
1 green bell pepper (chopped)
4 tablespoons carrots (chopped)
1 tablespoons olive oil
1/4 cup of water

Recipe Directions for Chicken in Satay Peanut Sauce

  1. In a medium-sized skillet, heat one tablespoon of olive oil over medium-high heat. Add chicken breasts and cook until golden on both sides and juices run clear.

  2. Remove chicken from skillet and cut into bite-sized pieces. Set aside.

  3. Add onions, bell peppers and carrots to the skillet and add 1/4 of water. Cook vegetables thoroughly until soft.

  4. Add chicken to vegetables and add Peanut Satay Sauce. Reduce heat to medium low. Mix well and continue cooking for 5 more minutes.

  5. Remove skillet from heat.

  6. Serve over brown rice.
