Chicken Saltimbocca Recipe

From Williams-Sonoma "Chicken". Prosciutto is not pancetta.

Recipe Ingredients for Chicken Saltimbocca

24 oz skinless, boneless chicken bread halves
1/3 cup all-purpose flour
2 T unsalted butter
1 T extra-virgin olive oil
2 t fresh sage, chopped
28 g prosciutto
1/4 lb fresh mozzarella
3/4 cup dry white wine

Recipe Directions for Chicken Saltimbocca

  1. Season the chicken with salt and pepper. Spread flour on plate and dredge each breast, shaking off the excess.

  2. In large frying pan over medium-high heat, melt 1T butter with the oil until very hot. Add chicken breasts and cook, uncovered, until the undersides are golden brown, 5-6 minutes.

  3. Turn the chicken over and continue to cook until they feel firm when pressed in the centers, 4-6 more minutes.

  4. Reduce the heat to very low. Sprinkle the breasts evenly with the copped sage. Top each breast with a piece of prosciutto, then divide the cheese slices evenly amoung the breasts.

  5. Cover the pan tightly and cook until the cheese is melted, about 1 1/2 minutes.

  6. Transfer to serving platter and tent with aluminum foil.

  7. Raise the heat to high. When the pan in sizzling, add wine and deglaze the pan, stirring to scrape up any browned bit stuck on the bottom.

  8. Boil until reduced to 1/4 cup, about 3 minutes. Remove from heat and whisk in the remaining 1 T butter.

  9. Spoon an equal amount of sauce over each breast. Serve at once.
