Recipe Ingredients for Chicken Saltimboca

3 breast, bone and skin removed Chicken, Breast, Meat Only
1 package (10 oz) yields Spinach
8 slices Prosciutto
0.25 cup Parmesan, Grated Cheese
1.5 fruit (2-1/8" dia) Lemons
14 oz Organics Organic Chicken Broth
3 tbsp Extra Virgin Olive Oil
0.5 tsp Pepper, Black
0.5 tsp Kosher Salt

Recipe Directions for Chicken Saltimboca

  1. Pound out the chicken breasts as thin as possible without breaking holes in the meat. Cut the breasts into 8 pieces, crosswise, to be ultimately rolled up. Season both sides of the chicken with salt and pepper.

  2. Thaw the spinach and squeeze all of the water out of it. Season with a little salt and pepper, to taste, and 1 Tbsp olive oil. Set aside.

  3. Squeeze 2-3 Tbsp lemon juice out of the lemons, and set aside.

  4. On each chicken breast piece, place a strip of proscuitto, a line of spinach, a sprinkle of parmesan, and then roll up tightly, securely each with 2 toothpicks entered across the width of the chicken so that it can lay on each side of the roll when it is cooked in the pan.

  5. Heat 2 Tbsp olive oil in a large pan deep enough to hold the chicken and broth over medium-high. Place the chicken rolls in the pan and cook on each side until golden brown, about 1-2 minutes per side (but don't go much longer or the chicken will dry out).

  6. When the chicken is browned, turn the heat up and add the broth and lemon juice. Deglaze the pan (scrape the burnt on bits from the chicken off the bottom of the pan) and bring the broth-lemon juice mixture to a boil. Once boiling, lower the heat to medium so that it continues to simmer, cover the pan, and cook the chicken through, about 6-8 minutes.

  7. When the chicken is done, remove it from the pan and place on a large, semi-deep plate, and cover until it's time to serve.

  8. Turn up the heat on the pan with the broth to high, and boil the sauce until it is reduced (the water has evaporated) to about 2/3-1 cup. Pour the lemon sauce over the chicken and serve immediately.
