Homemade salsa with fried Chicken on a bed of Couscous

Recipe Ingredients for Chicken Salsa with Couscous

1 cup Yellow Squash
1 cup, sliced Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peppers, Sweet, Green
1 cup, pieces or slices Mushrooms
3 Medium Tomatoes
1 thigh, bone and skin removed Chicken, Thigh, Meat Only
1 cup, cooked Couscous, Cooked
1 dash Salt, Table
1 dash Pepper, Black
1 cup, diced Celery

Recipe Directions for Chicken Salsa with Couscous

  1. Place oil in a hot non-stick pan and fry off chicken. Chicken can be whole or diced.

  2. Once chicken is just brown, place in tomatoes, squash, zucchini, celery, salt and pepper. I normally put in 2 good dashes of Worsteshire sauce too.

  3. Reduce heat and allow to cook until vegetables have broken down, place in remaining vegetables and cook until peppers are tender, but not mush.

  4. Cook Couscous as the packet says (most brands are a little different) and serve while hot.

  5. Couscous on the plate first and the chicken and salsa stright on top :)
