Adapted from a recipe in the American Heart association cookbook. Used tofu instead of yogurt to avoid dairy. Used light mayo instead of non-fat because that is what I had.

Recipe Ingredients for Chicken Salad Stuffed Bell Peppers

3 chicken breasts, cooked
1/4 c. low fat mayo
91 g Light Tofu
1/2 c. carrots, chopped
1/4 cup celery, chopped
2 green onions, chopped
1 tbsp oregano, dried
1 tsp worcestershire sauce
3 red bell peppers, large, seeded, halved

  2. Mix rest, except bell peppers

  3. fill halved red bell peppers
