I sub-ed original recepie by losing Swiss Cheese and Croissants, and adding mozarella and regular sourdough or white french bread. It cut the cals in half.

Recipe Ingredients for Chicken Salad Sandwich

2 cups cubed, skinless chicken
8 oz mozarella
1/2 cup dill pickle relish
2/3 cup light mayonnaise
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
6 leaves of Lettuce Leaves
6 oz bread

Recipe Directions for Chicken Salad Sandwich

  1. In a large bowl, combine the chicken, cheese and pickle relish. Combine the mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.

  2. Place a lettuce leaf on each bread; top with about 1/2 cup of the chicken mixture.
