A nutty, sweet chicken salad. Great with crackers, in a pita, or on bread.

Recipe Ingredients for Chicken Salad

4 chicken breast, skinless boneless cooked and diced
3 ounce sliced almonds
1 apple, red delicious
1 ounce sweet gherkins
1/3 cup mayonaise
4 eggs, hardboiled and diced

Recipe Directions for Chicken Salad

  1. Cook the chicken breast in a large pot with 1/2 onion sliced, 1 stalk celery, and 1 clove garlic, diced. cube once cooled

  2. Chop apple and sweet gherkins

  3. Combine apple, sweet gherkins, and sliced almonds in a large bowl

  4. Chop hardboiled eggs and add to apple, nut mixture

  5. Add chicken once cooled

  6. Add mayonaise until you reach the consistency you like - normally 1/4 cup to 1/3 cup.

  7. Season with cayenne pepper, black pepper, and salt if you like.
