Chicken Salad made with roasted chicken

Recipe Ingredients for Chicken Salad

2 cups Chicken, Breast, Meat Only
1/2 cup onion, diced
3/4 cup celery, diced
2 boiled eggs, mashed
2 T mayonnaise
1/4 tsp. Seasoned salt
1/4 tsp. pepper

Recipe Directions for Chicken Salad

  1. Chop up enough breast meat from a roasted chicken to make 2 generous cup.s

  2. Mash the boiled eggs in with the chicken.

  3. Add 2 heaping Tbs. of mayonnaise and mix it all together. I like to mash the chicken up a little to make it creamer.

  4. Add the celery, onion, salt and pepper and mix well.

  5. Serve on a bed of lettuce or make a roll up with Smart & Delicious high fiber tortillas.

  6. For a little different taste you can add some Tabasco or Wasabi
