4 Teaspoon Juice
2 Teaspoon Vinegar Wine White
0.25 tsp Classic Dijon Mustard
0.5 fruit without seeds Lemons
1.5 serving VIGO EXTRA VIRGIN OLIVE OIL
1 dash Pepper, Black
1 Serving Chicken
2 cup, shredded or chopped Lettuce, Butterhead
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 cup Beans, Kidney, Red, Mature Seeds, Canned
1/2 cup slices Cucumber
2 tbsp chopped Onions
0.25 cup, chopped Peppers, Sweet, Red
0.25 cup, chopped Peppers, Sweet, Red

Recipe Directions for Chicken Salad

  1. 1. Cook Chicken breast as desired.

  2. 2. Whisk lemon juice, vinegar, mustard, and lemon zest together in a small bowl. Add olive oil and pepper; whisk well to combine. Set aside.

  3. 3. Place remaining ingredients in a medium salad bowl and toss with dressing.
