I used one of the pre-roasted store chickens to make this.

Recipe Ingredients for Chicken Salad

4 cups chopped chicken
1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped onion
3/4 cup mayonnaise
1 teaspoon black pepper

Recipe Directions for Chicken Salad

  1. In a large bowl, mix chicken, carrots, onion, celery, mayonnaise and black pepper.

  2. refrigerate and keep for 3 days.
