Perfect for appetizers, potlucks, garden parties as well as regular meals.

Recipe Ingredients for Chicken Salad

3 pounds roasted chicken breast
1 pound red seedless grapes
1 pound Emmenthaler cheese
1 cup Mayo Mayonnaise with Olive Oil
4 tablespoons dijon mustard
2 italian tomatoes
2 avocados

Recipe Directions for Chicken Salad

  1. Poach chicken, cut into 1" cubes, and cool in refrigerator for at least an hour or up to overnight. Cut cheese into 1/4" cubes. Mix mayo and mustard with a dash of S&P, then mix all ingredients gently in a bowl.

  2. Chill before serving to meld flavors.

  3. Serve atop large-leaf lettuce with tomato and avocado as a garnish.
