Not sure if this is really 8 servings or not...chicken salad

Recipe Ingredients for Chicken Salad

2 cups canned chicken
1/2 cup sliced almonds
8 oz. water chestnuts
2 oz. pimentos
1 cup celery
1 small onion
1/2 tsp. salt
1/8 tsp. pepper
2 tsp. lemon juice
1 cup lite mayo
8 oz. shredded cheddar

Recipe Directions for Chicken Salad

Preheat oven 350 degrees. Mix all ingredients except cheddar. Pour into a 2 qt. casserole dish. Sprinkle cheese on top. Bake uncovered for 30 minutes.
