Recipe Ingredients for Chicken Salad

6 cups Chicken, white meat only (ground)
3 stalks celery (diced)
1 green pepper (diced)
1 cucumber (diced)
1 small onion (diced)
6 tablespoons Miracle Whip Light

Recipe Directions for Chicken Salad

  1. Stew chicken in crock pot on high. Be sure to cover the meat with water. Cook on high for 45 minutes. Turn down to low and cook for 2 hours or until the aroma of the cooking meat is noticeable.

  2. Remove chicken from crock pot. Place meat into container and refrigerate.

  3. When chicken is cooled, place into food processor and chop until the meat is ground into small pieces. Set aside in the refrigerator.

  4. Take celery, green pepper, cucumber and onion and dice into small pieces.

  5. Combine chicken and vegetables with Miracle Whip Light. Stir well. Place in refrigerator for at least one hour before serving.
