Creamy chicken salad for use in sandwiches

Recipe Ingredients for Chicken Salad

1 3/4 lb. boneless, skinless chicken breasts
1 salt
1 pepper
2 tbsp. vegetable oil
1 cup celery, chopped fine
1 cup seedless grapes
1/2 cup sliced almonds
1/2 cup mayonnaise
2 tsp. dijon mustard
1 tsp. curry powder
2 scallions, minced
2 tbsp. fresh lemon juice
2 tbsp. minced fresh parsley

Recipe Directions for Chicken Salad

Season chicken with salt & pepper. Heat oil in 12" non-stick skillet over med. heat until shimmering. Carefully add the chicken & cook until lightly golden brown on the first side, about 5 mins. Flip the chicken over, cover and continue to cook until it is no longer pink in the center, about 5 mins. longer. Transfer the chicken to a plate & refrigerate until chilled, about 30 mins. Cut the chilled chicken into 1/4 inch pieces & toss with the remaining ingredients. Season with salt & pepper to taste.
