Lite, yummy and easy to prepare!!

Recipe Ingredients for Chicken salad

1 cup chicken breast, cubed
1 green onion, diced
1/4 cup light mayonnaise
1/4 cup frozen peas
1 celery stalk, chopped
2 tbsp red bell pepper, diced
1/4 tsp salt
1 black pepper to taste

Recipe Directions for Chicken salad

  1. Boil chicken with salt for about 15 minutes then set aside.

  2. While it cools chop/dice vegetables and let peas thaw out for a few minutes.

  3. Take cooled chicken and dice into cubes and place in a small mixing bowl.

  4. Add mayo, pepper and all chopped veggies then toss until mixed well.

  5. Refrigerate for about 30 min.

  6. Optional- can eat with 4-6 whole wheat crackers
