Recipe Ingredients for Chicken Salad Pita

1 cup boneless skinless chicken breast, cubed
1/4 cup roasted red pepper, chopped
2 tbs capers
2 tbs red onion
2 leaves romaine lettuce
1 whole wheat pita

Recipe Directions for Chicken Salad Pita

  1. Brown chicken breast over medium-high. Remove from heat.

  2. Dice red pepper, capers, and onion. Mix in chicken.

  3. Cut pita in half and microwave for 25 seconds, or until soft.

  4. Open pita, put in lettuce leaves and spoon in half of the mixture.
