100 tomatoes , sliced
50 carrot, grated
25 c. avocado, diced
12 c. mint
46 lbs. black beans
50 tomatoe, diced
50 c. corn
3 c. extra virgin olive oil
3 c. garlic, minced
2 c. oregano
1 1/2 c. cumin
6 1/4 c. apple cider vinegar
12 1/2 c. parsley

Recipe Directions for chicken salad lettuce wraps with black bean, corn salad

  1. whisk lemon juice, honey, and apple juice

  2. combine tomato, carrots, avocados, and mint in large bowl toss together with dressing

  3. combine black beans, tomatoes, and corn in a large bowl

  4. heat oil in a large rondo and sweat garlic

  6. remove from heat add vinegar

  7. pour over salad and fold in parsley

  8. cool and store until service
