A lower-carb variation of the turkey salad taken from Williams-Sonoma's "Eat Well" cookbook. Removed the dried cranberries and, obviously, used chicken instead of turkey, although turkey is perfectly acceptable in this recipe.

Recipe Ingredients for Chicken Salad (LC)

1 1/2 cups celery, finely chopped
2 cups chicken, roasted
1/4 cup fresh parsley, minced
2 green onions, minced
1/4 cup plain yogurt
2 tbsp mayonnaise
1 tsp salt
1 tsp pepper

Recipe Directions for Chicken Salad (LC)

Combine celery, chicken, parsley, green onions, yogurt and mayonnaise in a bowl and mix well. Season with salt and pepper. Mix again and let stand at room temperature for 30 minutes, or chill for at least 3 hours to blend flavors. Enjoy over butter lettuce or use as a sandwich spread.
