Quick and easy lunch high in nutrients, for which I'll accept the higher sodium.

Recipe Ingredients for Chicken Salad with Greek Yogurt

12.5 oz Premium Chunk Chicken Breast in Water
1 oz Lowfat Plain
1/4 tsp Seasoning Blend
0.25 cup, shredded or chopped Lettuce, Iceberg
1 stalk, small (5" long) Celery

Recipe Directions for Chicken Salad with Greek Yogurt

  1. Drain liquid from can of chicken. Dump into small mixing bowl. Using fork, break up chunks.

  2. Add 2 tablespoons Mayo made with olive oil and 2 Tablespoons Plain Greek Yogurt (low fat).

  3. Dice one small celery stalk and stir in.

  4. Tear up about 1/4 cup crisp lettuce. Stir in.

  5. Season with pepper and any Mrs. Dash seasoning.

  6. Serve on 1/2 piece of Oat Bran Pita Pocket or bread of your choice. Or serve with low fat cottage cheese.
