Chicken, grapes and apples in a light, lemon mayonnaise.

Recipe Ingredients for Chicken Salad W/fruit

4 cups chicken breast, diced
2 cups grapes, red, sliced
2 apples, green
2 T. mayonnaise
1/4 c. lemon juice, fresh

Recipe Directions for Chicken Salad W/fruit

  1. Trim fat from chicken breast. Boil, cool, dice. Set aside.

  2. Squeeze juice from 1 whole lemon into glass bowl.

  3. Dice apples with skin on and mix with lemon juice throughly.

  4. Add diced chicken and grapes.

  5. Add mayonnaise, enough to coat chicken & fruit.

  6. Chill & serve.
