Really is 3.5 lbs of boneless, skinless chicken thighs, but had to adjust to get the correct calorie count according to Foster Farms' nutrition label

Recipe Ingredients for Chicken with Safron and Green Olives

2.11 lbs Boneless Skinless Chicken Thighs
2 T olive oil
1 onion
1 red bell pepper
1/4 t saffron
1/4 t red pepper flakes
5 garlic cloves
1/2 c marsala
4 c chicken broth
14 oz tomatoes
3 c brown rice
1 c olives
6 c broccoli

Recipe Directions for Chicken with Safron and Green Olives

  1. Preheat oven to 350

  2. Season Chicken with salt and pepper

  3. Brown in 1 T olive oil over medium high heat

  4. Transfer chicken to plate

  5. Wipe out pot

  6. Cook onion, pepper, saffron and red pepper flakes in 1 T olive oil over medium heat for 10 minutes

  7. Add garlic, saute for 30 seconds

  8. Add sherry, cook 1 minute

  9. Add chicken, chicken broth, tomatoes and juices; bring to a simmer cover and bake in oven for 30 minutes

  10. Stir in olives, rest broccoli on top

  11. Bake for another 20 - 30 minutes until rice is cooked.

  12. Stir in broccoli, let stand 10 minutes, serve
