Chicken and Spinach w/ yogurt, curry, and chili

Recipe Ingredients for Chicken Saag

16 oz spinach
2 tbsp ginger root
2 cloves of garlic
2 tbsp pepper, hot chile
1 cup water
1 tbsp vegetable oil
2 tsp bay leaves
1/4 tsp black peppercorns
1 onion
3 tomatoes
2 tsp curry powder
1 tsp salt
1 tsp chili powder
7 tbsp plain yogurt
4 breasts of chicken

Recipe Directions for Chicken Saag

  1. Wash the spinach but do not dry it. Cook the spinach without extra water in a tightly covered pan for 5 minutes.

  2. Put the cooked spinach, grated ginger, and chopped chili pepper along with 1/4 cup of water into a food processor or blender and process to a thick puree. Set aside.

  3. Heat the oil in a large heavy pan. Add the bay leaves and black peppercorns and fry for 2 minutes.

  4. Stir in the finely chopped onion and fry further for 6-8 minutes or until the onion has browned.

  5. Peel and chop your tomatos and then add them to the browned onions. Allow to simmer for 5 minutes.

  6. Stir i the curry powder, salt, and chili powder. Cook for 2 minutes over a medium heat, stirring once or twice.

  7. Stir in the spinach puree and add the remaining 3/4 cup water. Let simmer 5 minutes

  8. Add 3 tbsp of yogurt 1 tbsp at a time, simmer for 5 minutes.

  9. Add the chicken breasts and stir to coat them. ( I like cutting the chicken into cubes but you can leave them whole if you'd like). Cover and allow to cook 25 - 30 minutes until the chicken is tender.

  10. Serve on Naan bread and top each portion with 1 tbsp of yogurt and a dash of chili powder.
